Why did I receive an email asking me to update mobile number/Email Id as it is linked to multiple trading accounts?

SEBI regulations require all stockbrokers to update email IDs and mobile numbers for each trading account with the exchanges. 

You will only be able to update a unique email ID & mobile number for your Zerodha account by logging in to Console > Account.

If you have the same mobile number/Email ID to a HUF/Corporate Account/Partnership, you can submit a hardcopy of this declaration confirming the relation of the Director/Major Shareholder/Partner /Trustee with the company/firm to our head office.

The declaration isn't accepted for individual accounts. You will have to use unique contact details for each account. If you fail to update unique contact details, your trading account access can be restricted due to KYC non-compliance.
